Dead Rabbit Irish Coffee

1 1/2 ounces Jameson original blended Irish whiskey 4 ounces freshly brewed coffee 2 cups Demarara sugar Fresh, barely whipped cream Freshly grated nutmeg


  1.  To make Demerara syrup, blend two cups Demarara sugar with one cup boiling water. Stir until the sugar is completely dissolved. Cool and store in the refrigerator until needed.
  2.  Pour 4 ounces of freshly brewed coffee (preferably made with a French press) into an IRISH COFFEE MUG.
  3.  Add 1/2 ounce of the Demerara syrup and stir.
  4.  Add 1 1/2 ounces of Irish whiskey.
  5.  Gently pour a thin layer of whipped cream from a small pitcher over the back of a SPOON and float the cream over the coffee.
