A sweet, sour, bitter, and truly awesome non-alchohlic Seedlip Spice 94 cocktail. A first cousin of Mexico's beloved national tequila-based thirst quenching La Paloma cocktail, this tart but pretty drink may be made with a sugar or salt rim.
Top with the club soda and add fresh ice cubes to the glass.
Garnish with the grapefruit peel.
To make simple syrup mix one cup water with one part sugar. Heat until dissolved. Let cool and store in the refrigerator for up to two weeks. Use a vegetable peeler to remove pith free strips from the grapefruit before juicing and twist before adding to the drink to release the peel's essential oils and aroma. A thinly sliced lime wheel also makes a nice garnish.
