A modern fusion cocktail that takes the best of a French 75, champagne, and the foundation of a mojito, aged rum and mint, and gloriously mixes them together for a refreshing drink perfect for balmy summer weather (but hard to resist even during colder months). Elevating the cocktail to professional mixologist status is easy when using El Guapo syrup and bitters made with fresh lime leaves, lime zest, lime juice and lime pulp, this complex syrup and the bitters are full of bright lime flavor and far better than using only simple syrup.
Ingredients
- 1.5 ounces Privateer True American Amber Rum
- 2 ounces El Guapo Lime Syrup
- 2 dashes El Guapo Cuban Bitters
- 6 mint leaves, plus sprig for garnish
- 2 ounces champagne
- 1 small lime, wheel
Directions
- Put the mint into a cocktail shaker. Add the El Guapo Syrup and gently bruise the mint with a muddler or wooden spoon.
- Add the rum and the bitters and fill the cocktail shaker with ice.
- Shake vigorously until the cocktail is well-chilled, about 15 to 20 seconds.
- Strain into a cocktail coupe and top with the champagne.
- Garnish with a lime wheel and mint sprig. Serve immediately.
Bar Notes
While champagne is traditional, proseco is a perfectly acceptable riff. Fresh mint leaves required. Chill the coupes before pouring the cocktail.
