Decades ago we planted 100 apple espaliers to form a fence in our backyard. So successful and beautiful the outcome, last year we added pear espalier trees to our fruiting landscape. Espaliers are much smaller than ordinary fruit trees as they have been pruned to maintain a certain look and size. They are amazing specimens that have the ability to produce different varieties of apples or pears on the same tree. We had a bumper crop this year. This recipe is a result of the last few pears of the season sitting in a bowl and needing to be used up before they softened too much. This is an autumn cocktail, a drink sip throughout the fall and winter when pears are at their peak and a bit of bourbon warms from the inside out. The touch of maple may be left out but we love the sweet lift it gives to the cocktail and how it tastes when using a cinnamon stick as a swizzle stick.

Ingredients

  • 2 ounces bourbon
  • 1 ounce Poire Williams
  • 1 ounce pear juice
  • 1 teaspoon maple syrup
  • Ice cubes
  • Bosc pear, 1/4" slices (top to bottom including stem)
  • Cinnamon stick, for garnish (optional)

Directions

  1. Add ice to a cocktail shaker.
  2. Add all of the ingredients except the pear slice and cinnamon stick to the shaker.
  3. Shake vigorously.
  4. Pour over ice and garnish with a pear slice and cinnamon stick. Serve immediately.
