This is a famous recipe--and for good reason. Union Square Cafe in New York City is a beloved spot that for over 30 years has offered up menus inspired by local produce offered in Union Square's year round Green Market-- a stone's throw from the restaurant's kitchen. Celebrities, locals, and out-of-towners find this James Beard award-winning spot charming and consistent. If you have ever waited for a table, or popped in for an after work drink, the $6 bar nuts are crazy satisfying. Served warm, the hint of rosemary and pepper provide depth to the brown sugar and butter tossed nuts. During the holiday season and sometimes just for Netflix snacking, these dressed up nuts offer up an easy to prepare, healthy for body and soul, crunchy and satisfying get the party started food. If you happen to be in the Big Apple, a trip to the bar to sample them in person will prove a regretless decision.
INGREDIENTS
- 1/4 pound peeled unsalted peanuts
- 1/4 pound cashews
- 1/4 pound hazelnuts
- 1/4 pound walnuts
- 1/4 pound pecans
- 1/4 pound whole unpeeled almonds
- 1/2 teaspoon cayenne pepper
- 1 tablespoon rosemary
- 2 teaspoons dark brown sugar
- 2 teaspoons kosher salt
- 1 tablespoon butter, melted
DIRECTIONS
- Preheat the oven to 350 degrees F.
- Toss the nuts in a large bowl to combine and spread them out on a cookie sheet. Toast in the oven until they become light golden brown, about 10 minutes.
- In the same bowl, combine the rosemary, cayenne, brown sugar, salt, and melted butter.
- Thoroughly toss the warm toasted nuts with the spiced butter and serve warm.
Kitchen Notes
Any combination of nuts works well. If you can find Brazil nuts, they are unexpected and make the finished nuts texturally even more pleasing to look at and to taste. The nuts may be stored for up to one week in an airtight container--warm in the oven for a couple of minutes just before serving.
