A fine example of nineteenth century French culinary craftsmanship, this small preserve pan was forged in the 1880s from heavy gauge copper with tall straight walls and fitted with riveted brass handles. Its compact size and upright form speak to the era’s devotion to slow cooked fruit conserves, when copper’s unrivaled heat conductivity coaxed sugars into jewel toned jams and marmalades. Time has lent the pan a soft patina that recalls the rhythm of kitchens in provincial France where such vessels were prized for their utility and beauty alike.
