Traveling in the Cotswolds we discovered a version of this botanically inspired cocktail. Refreshing and light, it was the perfect cooling off tipple following a long day of country walks under a rare but welcomed sunny day strolling the scenic countryside of sheep studded rolling hills, magical woodlands, rose covered cottages, and historic pub filled villages. The gin base is fig infused, creating a light, earthy, barely sweet but figgin' delicious fruit profile that welcomes botanical friends to its mix. Smashing the cucumbers brings out its juices, pulp, and oil for maximum flavor (and to boot, it is gloriously fun to muddle). The limes, or lemons if preferred, balance the sweetness of fig profile and the apple juice. We garnish the cocktail with blackberries, a nod to the hedgerows prominent in the lush English countryside.

Ingredients

  • 2" piece cucumber, crushed
  • 50mL organic apple juice
  • 25 mL lime juice, freshly squeezed
  • 25 mL elderflower cordial
  • 50mL fig gin
  • Ice cubes
  • Fresh mint leaves
  • Blackberry and or lime garnish, optional

Directions

  1. Place the cucumber in the cocktail shaker and muddle untill the cucumber is smashed.
  2. Add the apple juice, lime juice, elderflower cordial, and gin into a cocktail shaker.
  3. Fill the shaker with ice. Shake vigorously for 30 seconds.
  4. Pour the mixture into a cocktail glass filled with ice cubes or serve chilled without the rocks.
  5. Garnish and serve immediately.
