Along the sunlit shores of Italy, from the fishing villages of Liguria to the ristoranti di mare of Sicily, summer arrives on a platter of freshly grilled fish. This Grilled Red Snapper is recreated from a meal eaten cliffside in Positano, a place that even today has a 1950s romantic nostalgia associated with its dramatic vertical setting tucked among pastel-colored houses that cascades down steep cliffs to the Mediterranean Sea.  Approachable only from a winding staircase adds makes this lemon scented fish so much a memory of my visit to the Amalfi Coast. Marinated in a fragrant blend of parsley, oregano, thyme, and garlic, then stuffed with slices of onion and grilled alongside charred lemon rounds that perfume the flesh with the scent of citrus and smoke. Once lifted from the fire, it is crowned with peppery arugula leaves that wilt gently against the warm fish. Presented family style upon a red and white checked tablescape, accompanied by bowls of olive antipasti and a magnificent wedge of Parmigiano Reggiano, it evokes the enduring pleasures of this Italian seaside village, where the day's catch is plucked from the sea at dawn and carried straight to the table, inviting long lunches, intimacy, and the simple luxury of eating well.

Ingredients

  • 4 pound Red Snapper
  • Salt and Pepper
  • 1/2 small onion sliced into very thin rounds, and then slice in half
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, minced
  • 1 teaspoons fresh thyme leaves
  • 1 teaspoon dried Greek oregano
  • 2 lemons, 1 sliced into 1/4" rounds, the other halved
  • Olive oil
  • 1/2 cup arugula microgreens (or baby arugula if microgreens unavailable)

Directions

  1. Preheat a gas grill to 375 degrees F. or build a charcoal fire.
  2. Dry the fish thoroughly and season liberally inside and out with salt and pepper.
  3. Drizzle olive oil over the onions, garlic, parsley, thyme, and oregano, toss to combine, and then tuck the mixture into the pocket of the fish.
  4. Rub oil all over the fish including the tail. Place a piece of foil over the tail to protect it so it does not turn black and break off during grilling.
  5. Brush the grill grate or fish basket with olive oil. Place the fish on the grill and cook for 7 to 8 minutes. Flip and grill the other side another 7 to 8 minutes (when the flesh is flaky and can easily be pulled apart with a fork it is cooked properly).
  6. Brush the lemon slices with olive oil and grill along side the fish until the lemons are charred, this will take about 2 to 3 minutes. Remove from grill and set aside.
  7. Place the grilled fish on a serving platter and let it rest for 5 minutes. Tuck the baby arugula in and around the fish cavity. Place the grilled lemon slices on the platter. Squeeze one of the halves of charred lemon over the fish and serve immediately.
